Apple & Caramel Cheesecake


Sara Lee French Vanilla Cheesecake, thawed
• Whipped cream (to serve)
Caramel-Apple Topping:
• 3-4 medium apples
• 1/2 cup caster sugar
• 1/2 cup raw sugar
• 125g unsalted butter
• 1 tsp vanilla extract
• 50mL apple juice


1. Peel and core the apples, then chop them into slices or small cubes.
2. Combine the sugars, butter and vanilla in a saucepan, and cook over a medium heat until the sugar caramelises and the mixture begins to foam.
3. Add the chopped apple and cook for 5-10 minutes until golden brown.
4. Remove from the heat and stir in the apple juice, then set aside to cool.

Top the Sara Lee Cheesecake with whipped cream and Caramel-Apple Topping.
