Lemon & Raspberry Cheesecake


Sara Lee French Vanilla Cheesecake, thawed
• Whipped cream (to serve)
• Fresh raspberries (to serve)
Lemon Curd:
• 3 eggs
• 1 cup caster sugar
• 100mL fresh lemon juice
• Zest of 2 lemons
• 125g unsalted butter


1. Combine all ingredients in a saucepan.
2. Heat together over a medium heat while stirring with a whisk.
3. Cook until the mixture thickens and just starts to bubble.
4. Remove from the heat, transfer to a bowl and refrigerate until cool.

Top the Sara Lee Cheesecake with Lemon Curd, whipped cream and fresh raspberries.
